I would like to create a waterfall chart that has multiple categories in each column.

Bridges are very useful to explain movements based on a category. A stacked bridge would affectively help in providing a subcategory detail explaining multiple dimensions in a single graph, which is what Power BI is ultimately trying to achieve. Also, this feature is lacking in most of Power BI's competition and would be a valuable addition.
A sample usage would be increase in sales year on year by region and the stacking (subcategory) could be sales managers in each region or the contractual completion status of each category.
