I should be able to order the "legend" and the values for each legend category in a stacked bar chart. This is similar to "series order" feature in Excel

Yes, please. Ordered alphabetically sometimes does not make much sense. It'll be appreciated if the order of the column/row label of table or matrix could be customised as well, just like Excel does.

Can we get a similar function to Custom Sort Order just like Excel does it. This will fix quite a bit of the sorting issues we currently see in Power BI today.
For Example:
By Day of Week - Sunday to Saturday, Sun to Sat, etc
By Month of Year - January to December, Jan to Dec.
Give them a dialog or other options to control the order manually.

This is another example of a Power BI shortcoming that keeps sending me back to Tableau.

This feature would be handy when reporting in terms of months, especially month-to-date reporting. Currently, I added an additional column and gave each month a numerical value (Jan-1, Feb-2, etc), and then hid the numerical column once sorted. This step is unnecessary and inefficient. Another option would be to include the numerical value in the name of the month ("1-January", "2-February", etc.). This option is redundant and aesthetically unpleasing. Just a thought!

One work-around is to name the items in the legend with an appropriate number of blank spaces, so that when Power BI alphabetizes them, the leading spaces determine the order. So your categories could be:
" Strongly Agree"
" Agree"
" Disagree"
"Strongly Disagree"

So much of this. As Anne said, sometimes we don't want it in alphabetical order...
